Pumpkin with Cinnamon, Honey and Goji Berries


1/2 Organic Japanese Pumpkin
2 tbsps Organic Goji Berries
1 stick Organic Cinnamon
Organic Honey to taste
80ml Organic 100% Orange Juice

Cut pumpkin into slices. Do not bother to remove the skin, it gets more than soft enough to eat, tastes great and is very nutritious. Lay pumpkin in a saucepan and almost completely cover with water. Add orange juice to cover, cinnamon and goji berries. Bring to the boil and cook till the pumpkin is just soft, but not falling apart. Remove from the cooking water, and lay in a bowl. Mix two or three tbsps of the cooking water with honey to taste and ladle
over the pumpkin. Serve.
